<p>The <strong>Greenbelt 1</strong> branch of <strong>Max&#8217;s Restaurant</strong> was our chosen venue for a personal <strong>Man Vs. Chicken</strong> challenge.  To prepare we just had a light salad for lunch and drank lots of liquids to hydrate ourselves for an unlimited serving of many Filipino’s favorite fried chicken.</p>

<p>We started at <strong>7:00PM</strong> and <strong>Max&#8217;s</strong> was already filled with hungry anticipating customers.  In fact the anticipation was intoxicating.</p>

<p>Given that the place was filled to capacity, we were surprised that we were served our first piece of fried chicken within five minutes of seating. <strong> There are no long waits before you are served!</strong></p>

<p>Operations are efficient with at least two waiters <strong>patrolling </strong>around with trays containing a minimum of <strong>12 freshly deep fried chicken</strong> from quarter cuts to thigh and ribs.  You can choose the part you want and even get a few pieces ahead of time so you do not have to keep asking.</p>

<p>What is the best part in a <strong>Max&#8217;s Fried Chicken</strong>?  We both had to agree that the best part of the chicken to eat is undoubtedly the <strong>Quarter cut </strong>which not only had the most flavor but the juiciest flesh as well as the crispiest skin.  This picture brings back memories of one of our favorite dishes &#8211; <strong>duck confit</strong>.  While <strong>Max&#8217;s Fried Chicken</strong> tastes good on its own they sauces provided also give it that Filipino touch with <strong>banana ketchup</strong> and their house <strong>worcestershire sauce</strong>.</p>

<p><strong>What was the total damage?</strong> We are proud to say that we completely devoured a combined total of 12 pieces (8 &#8211; Lord 4 &#8211; Aksana), this translates to 3 whole chickens!  How many chicken&#8217;s did you eat?</p>

<p>Did you know that <strong>Max&#8217;s </strong>started when <strong>Maximo Gimenez</strong>, a Stanford educated teacher offered drinks at his house in Quezon City to American soldiers at the end of World War 2.  It was his niece <strong>Ruby </strong>who took charge of the kitchen and created the signature <strong>Fried Chicken</strong> that has made Max&#8217;s a Filipino tradition.  If only they setup a new concept <strong>Max&#8217;s</strong>, brought back their original menu and for a taste of the 50&#8217;s!</p>

<p>Who hasn&#8217;t tried a Filipino delicacy &#8211; <strong>Buko A La Ube Ice Cream</strong>?  <strong>Green ATS Bulalohan</strong> is as local as you would want to get on the Tagaytay Ridge without compromising a certain level of comfort and security.  They do one thing amazingly RIGHT and that is putting their BUKO where their mouth is!<br />

<p>Located along the <strong>Tagaytay Ridge</strong> after <strong>Bag of Beans</strong> but before the road markers to <strong>Antonio&#8217;s</strong> lies this local treasure.  They serve so many buko&#8217;s here that you are guaranteed to get a young two-three months old buko with a lot of juice and soft tender white meat.  There is ample parking space in front of the restaurant and attendants to assist.</p>

<p>While service may not be the most efficient, there is time to sit back and enjoy the magnificent view of <strong>Taal Volcano</strong> while waiting for one of the freshest deals in <strong>Tagaytay</strong>.  They also serve the juice first before the buko!</p>

<p>We would not recommend any other dishes as we believe their best product may be the simplest and there have been too many mixed reviews about their Bulalo which we already had at <strong><a href="http://www.hourphilippines.com/2011/03/bulalo-at-josephines-restaurant-tagaytay/">Josephine&#8217;s</a></strong>!  Take note that <strong>Green ATS is open 24 hours</strong> so if you ever get that buko ube pang, you know where to go.  Enjoy!</p>

<p><strong>Josephine&#8217;s Restaurant</strong> in <strong>Tagaytay </strong>will make you fall in love with Filipino food for the first time and in some cases all over again.  Beautifully located along the Tagaytay ridge offering panoramic views of Taal Volcano, while providing the comfort of truly amazing Filipino classics such as bulalo, bistek tagalog, sinigang na sugpo and crispy pata.  I never truly appreciated Filipino food growing up, but Josephine&#8217;s has reawakened that deep rooted hunger within.<br />

<p>The original <strong>Josephine Restaurant</strong> was opened in <strong>1966 </strong>in <strong>Kawit</strong>, Cavite and has branched out to Cubao, Baclaran, Pasay, Makati, Greenhills, and Tagatay opened in 1995.  It is conveniently located opposite the <strong>Summit Ridge Hotel</strong> and boasts floor to ceiling windows, ample free parking, an air-conditioned main dining hall as well as al fresco dining and experienced service staff.</p>

<p>Tagaytay is known for <strong>Bulalo </strong>soup especially during cold weather.  There are numerous bulalo restaurants that line the ridge, but nobody does it like <strong>Josephine</strong>.  <strong>Bulalo </strong>is a classic tendon and beef shank soup with leeks, onions, plantains, pechay and potatoes.  Make sure to create your own special sauce of calamansi, chili labuyo and patis (fish sauce).  Don&#8217;t forget to dig out the bone marrow, this is just <strong>cholesterolicious</strong>! <img src='http://www.hourphilippines.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>

<p>Do <strong>Russians </strong>like <strong>Filipino </strong>Food?  Our friends Aleksander Sokolov and Alina Harkach from Russia just arrived in Manila and were virgins to Filipino cuisine.  They did not have a clue of what our food was about.  As an introduction to our marvelous country and culinary heritage, we brought them to <strong>Fely J&#8217;s Kitchen</strong> in <strong>Greenbelt 5</strong> to sample what we believe to represent the best of Filipino Fine Dining.<br />

<p><strong>Fely J&#8217;s Kitchen</strong> is a Filipino restaurant created in 2008 by the Larry J. Cruz (LJC) Group in honor of his mother and her revered style of cooking.  </p>
<p>As a rude awakening, we had the <strong>Chicharon Bulaklak</strong> as an appetizer and of course we did not tell our unassuming friends what it was as it might influence their perceptions and possibly repulse them from even tasting.  They eagerly dipped a crisp morsel into the vinegar spiced with chili labuyo and popped it into their mouths.  </p>
<p>They advised us that they were quite hungry as they had a long connecting flight from Dubai via Emirates.  While Aleksander and Alina did not know what was entering their system, they liked it completely and chomped it down with gusto.  When we advised them that it was a meticulously cleaned pig intestine, they told us that it is similar to a Russian fried pork dish called &#8220;shkvarki&#8221; but it was their first time to try innards and did not expect it could taste so deliscious.  The crunchiness combined with the chewy inside of the deep fried pork intestines fired up their appetite for the next dishes to come.  <strong>Fely J&#8217;s</strong> has one of the best chicharon bulaklak we have tried, the only other place that even compares is at the <strong>Lobby </strong>of the <strong>Peninsula Hotel</strong>.</p>

<p><strong>Sinigang </strong>is truly one of our favorite soups in the world.  It has such a powerfully sour tangy flavor from the tamarind that is uniquely Filipino.  Some people can not handle it, some adore it, and some simply can not live without it!  At <strong>Fely J&#8217;s</strong> they have the regular sinigang and the guava based sinigang.  We have tried their guava version and it is good, but in this case we went for their original with prawns.  With a little bit of patis &#8211; local fish sauce and calamansi and we were in soup heaven!  But alas, Alina and Aleksander had difficulty even having a spoonful of this dish as it was just too strong for their tastebuds.</p>

<p>As our first course we had Filipino spinach in coconut milk.  Everybody enjoyed the sweetness of the coconut milk as a contrast to the sinigang beforehand.  The kangkong was fresh and had a nice bite to it.</p>

<p>Their lamb stew while enjoyable was nothing to rave about and was probably one of the weakest dishes.  There just wasn&#8217;t anything spectacular about it.</p>

<p>For our main entrée we had the <strong>Bistek Tagalog</strong>.  This is the Filipino thinly sliced steak marinated in a soy, garlic, calamansi sauce topped with onions.  They thoroughly enjoyed this dish as the beef was so tender and succulent.</p>

<p>All these courses could not have been considered a Filipino meal without the Filipino staple &#8211; RICE!  While most restaurants would serve plain or garlic rice, <strong>Fely J&#8217;s </strong>has their own unique twist which they have called Diliscious rice that has a generous topping of deep fried dried long-jawed anchovy a.k.a. dilis which add a tremendous amount of flavor to the rice. <p>A food trip to <strong>Tagaytay </strong>is no trip at all without a visit to one of the greatest restaurants in the Philippines &#8211; <strong>Antonio&#8217;s</strong>!  It was Aksana&#8217;s first time to visit this fine dining restaurant serenely situated deep within the rolling hills of <strong>Tagaytay</strong>.</p>

<p><strong>Antonio&#8217;s</strong> has grown over the past ten years from a seating capacity of forty people to one hundred forty.  Aside from consistently fantastic food, understated classic elegance that is so atmospheric you feel like you have been brought back in time to an Argentinian hacienda during the golden age of the 1920&#8217;s.  Just basking in the chic black and white interiors took Aksana&#8217;s breath away.  Owner and Chef <strong>Tony Boy Escalante</strong> must wake up every morning in a good mood as his establishment also serves as the primary home for his family.</p>

<p>The texture of the wrap of the garden crepe was light and gentle yet surprisingly crispy.  What really shines is the freshness of their ingredients &#8211; the filling of white button mushrooms, bell pepper, tomatoes, onion and cheddar was a savory combination. <p>Who has not eaten corned beef in the Philippines?  This corned beef however is not canned but made fresh by submerging the brisket in a special brine over a few days then boiling it.  The meat was so tender and flavorful and served with horseradish and mustard.  If you are a fan of corned beef for breakfast, make sure to try this version without preservatives.  The scrambled egg was a treat in itself, it was so fluffy and delicate and must have been whisked to perfection.</p>

<p>For dessert we tried the panna cotta, a classic Italian desert that originated from Piemonte in northern Italy.  Simply made from heavy cream, milk, sugar and gelatin it was not that sweet but the poppy seeds and rich flavors of vanilla and caramel made it shine.</p>
<p>We left at around 11:00 AM back to the <strong>Summit Ridge Hotel</strong> to check out at 12:00PM and head back to Manila for the drive home.</p>
<p>The <strong>Breakfast at Antonio&#8217;s</strong> menu has so many dishes to consider and drool over! <p>The <strong>Summit Ridge Hotel</strong> stands ten stories high above the Tagaytay Ridge and offers commanding views of Taal Volcano and Lake.  It is conveniently located opposite a renowned Tagaytay landmark <strong>Josephine&#8217;s Restaurant</strong>.  As it is a Robinson&#8217;s Land development they have also built a promenade with a Robinson&#8217;s Supermarket.  We arrived at 12:15PM and did not have any difficulty checking in ahead of the standard check in time of 2:00PM.<br />

<p>The lobby was spacious and airy, front desk swiftly processed our reservation and we were then escorted by the bellboy to our room.  The glass elevators were a nice touch similar to the <strong>Belle View</strong> in <strong>Tagaytay Highlands</strong>.</p>

<p>Our room was a 32sqm. <strong>Twin Classic Room</strong> on the 4th Floor that we booked a special local rate of PHP 3,250 Net ($US 80.00) vs. the rack rate of PHP 7,250.00 Net ($US 180.00) due to the low season after Easter.  While this did not include breakfast, it was not an issue as we already made plans to eat at <strong>Antonio&#8217;s Breakfast</strong>.</p>

<p>We easily felt at home in our room due to the soft wooden tones and Asian inspired decor.  The split type air-conditioning was sufficiently able to cool the room in a few minutes even though it was a scorchingly hot day.</p>

<p>We immediately unpacked and switched on the generic 32 inch LCD to <strong>Discovery Travel and Living</strong>.  Did I mention Wifi was free and surprisingly fast?  <img src='http://www.hourphilippines.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>

<p>Happy with the modern conveniences of our room, it was time to pop open our bottle of <strong>Grolsch</strong>, a Dutch Premium Lager whose first brewery began in 1615.  It was quite refreshing before we headed off to the outdoor infinity pool.</p>

<p>To build up an appetite we had a bottle of chilled Shochu produced in Kyoto, Japan.  Shochu is a Japanese spirit similar to vodka and the difference between Shochu and Sake is that Shochu is distilled while Sake is brewed.  It is known to be the better of two evils as it has only 20 calories per ounce.</p>

<p><strong>Annie&#8217;s Restaurant</strong> on the G/F of the <strong>Summit Ridge Hotel</strong> serves American comfort food from Spaghetti with Meatballs and club sandwiches to Yankee Pot Roast and Picnic Fried Chicken.  We ordered the salmon steak to complement our shochu.</p>

<p>We started off with good old San Miguel to cool off from the heat against the backdrop of the Hundred Islands.</p>

<p>For appetizers we had the fresh oysters cooked similar to a the Spanish ceviche.  This definitely got our digestive fires going for our main entree &#8211; Steamed Crab!</p>

<p>Maxine&#8217;s did a perfect job steaming this beauty that we chose to perfection that 1 Kilo seemed &#8220;BITIN&#8221; for a piece of heaven.  The meat was so juicy, sweet and succulent!  Maxine by the sea gets our vote as Hundred Islands al fresco dining at its finest.  How was your dining experience there?</p>

<p>We have heard so many wonderful things about the <strong>Hundred Islands National Park</strong> in Alaminos, Pangasinan and it was well worth the trip due to the spectacular view from <strong>Governor&#8217;s Island</strong>, basking on the white sand beach of <strong>Quezon Island</strong>, absorbing the mysterious spirituality of <strong>Marcos Island</strong>, and immersing one&#8217;s self in a nature reserve like no other.  Highly recommended for couples and families alike.<br />

<p>One does not even have to take a plane, all it takes is a sense of adventure and a 4-5 hour road trip with scenic views and surprisingly well paved roads.<br />

We arrived at the Hundred Islands Wharf around 4:00 PM and were glad to have made it without any difficulty.</p>

At the corner of the wharf were a few kids looking out to the Hundred Islands.</p>

After scouring the area for a decent hotel, there was only one that seemed appealing to due to the massive development, large parking lot, and closeness to the wharf.  It was the Vista De Las Islas Hotel a 2 minute drive from the main wharf.</p>

<p>For dinner, we went to the highly recommended sea front restaurant <strong>Maxine by the Sea</strong>.  Due to the al fresco style double decker patio with a view of the Hundred Islands we could not help but reward ourselves with a nice cold brewsky.  This restaurant is the largest restaurant in Lucap and could have easily have seated 200 people with an extensive menu that could satisfy a variety of palettes.</p>
